I love granola bars. I eat them almost every day for either breakfast or a snack. Granola bars are my go-to treat for a late night craving. The problem with some granola bars though is that they have a lot of unnecessary fat and calories.

These deliciously dreamy, peanut butter flavored squares of goodness will have you questioning if they’re actually good for you. But with peanut butter, raisins, and just the right amount of chocolate, you’ll have a hard time not eating the whole batch. But don’t! Seriously.. the whole pan will be like 3000 calories.
- 2 T unsalted butter
- 2/3 c creamy peanut butter
- 1/4 c confectioners sugar
- 3 T honey
- 1 tsp vanilla extract
- 1-1/2 c puffed rice cereal
- 1 cup quick oats
- 1/2 c chocolate covered raisins, halved (OR 1/4 c each raisins and mini chocolate chips)
- Melt butter and peanut butter in medium saucepan over medium heat, stirring constantly until butter is melted. Remove from heat and stir in confectioners sugar, honey, and vanilla. Add cereal and oats and stir to coat. Refrigerate 15 minutes to cool.
- Spray 8×8 dish with non-stick cooking spray. Add chocolate covered raisins to cereal mixture and mix gently. Press into dish with the back of a spoon. Cut into 16 squares when firm, refrigerating first if necessary.
Each bar is roughly 140 calories so eat one for a tasty yet filling mid-day snack.
Use Ideal Low Calorie Confectioners Sugar to lower the calories even more. You can also try using reduced-fat peanut butter (and let me know how it goes!).
